The Difference Between Green Onions, Scallions, Spring Onions, and Chives Explained

At first glance, green onions, scallions, spring onions, and chives can easily be confused. They all look similar, sit in the same grocery section, and share a mild onion-like taste. However, they are not the same ingredient, and knowing the difference can noticeably improve both the flavor and presentation of your cooking.
Green onions and scallions are actually the same thing. They come from young onions harvested before the bulb fully develops, which is why they have long green stalks and a small white base with little or no bulb. Their flavor is fresh, mild, and slightly sweet compared to mature onions. They are very versatile and can be used raw or cooked in salads, soups, stir-fries, and as garnishes. The white part tends to be a bit sharper, while the green tops are softer and more delicate in taste.
Spring onions are slightly more mature than scallions. They develop a small bulb at the base, which gives them a stronger and sweeter onion flavor closer to regular onions, but still not as intense. They work well in cooking methods like roasting, grilling, or sautéing, where both the bulb and green tops are used. They are especially common in Mediterranean and Asian dishes where a fuller onion flavor is desired without the harshness of fully grown onions.
Chives are quite different from the others, even though they look similar at a glance. They are not young onions but a separate herb related to the onion family. They grow in thin, grass-like stems with no bulb, and their flavor is very mild and fresh. Because of their delicacy, they are usually used raw as a finishing herb, sprinkled over dishes like eggs, soups, potatoes, and dips. Garlic chives are a variation with a subtle garlic-like taste.
