What Are Capers and How to Use Them in Cooking

Capers may be tiny, but they deliver a surprisingly bold flavor. These small green flower buds are picked before they open and then preserved in brine or salt, giving them their distinctive tangy, salty, and slightly citrus-like taste. Their unique flavor has made them a staple ingredient in many Mediterranean and European recipes.

One of the reasons capers are so popular is that only a small amount is needed to enhance a dish. They add brightness and depth to sauces, dressings, and marinades without overpowering the other ingredients. They pair especially well with lemon, olive oil, butter, seafood, and fresh herbs, making them an excellent addition to fish, pasta, and roasted vegetable dishes.

If you’re using salt-packed capers, it’s a good idea to rinse them before adding them to your recipe. This removes excess salt and allows their natural flavor to shine through. Capers can also be stirred into salads, vinaigrettes, sandwiches, or pizzas, providing a quick and easy way to add extra flavor to everyday meals.

For a different texture, capers can be lightly fried until crisp, creating a flavorful garnish for soups, grilled meats, and vegetable dishes. Affordable, versatile, and easy to use, they prove that even the smallest ingredients can make a remarkable difference, bringing bold flavor and character to a wide variety of meals.
